Le tiramisu d'Elodie S06#1



Dans un monde parfait RIEN ne me résisterait !

Je ne suis pas très prolifique en ce moment car je suis en vacances ! , mais j'ai voulu me rattraper en demandant à mes hôtes de me concocter leurs spécialités culinaires. Pour commencer ce "Summer 2006" tour voici des tiramisu extra !!!

Mon amie Elodie est la reine du tiramisu, sa version est délicieuse et met tout le monde d'accord. J'ai profité de mon week-end parisien de fiesta continue (8h de sommeil sur 2 jours) pour lui demander de faire ses petites merveilles sous mes yeux afin que cette spécialité italienne ne me résiste plus !!!
Bon, sous mes yeux, c'est beaucoup dire (après un dodo de 2h, et une certaine quantité d'alcool dans le sang), la cuisinière aussi n'avait pas vraiment les yeux en face des trous, mais .........ça a pris ! Cette recette est donc LA RECETTE TOUT TERRAIN DU TIRAMISU !

Tiramisu de l'extrême

Pour 4 personnes

Une barquette de mascarpone (250g)
5 biscuits à la cuillère
3 jaunes d'oeufs
4 cuillères à soupe de sucre
20 cl de crème fleurette
cacao en poudre
café

Battre la crème fleurette en chantilly, mettre le mascarpone dans un bol et mélanger avec une cuillère en bois un jaune d'oeuf à la fois. Introduire délicatement la crème fleurette au mélange mascarpone/oeufs. Sucrer selon les goûts, environ 4 cuillères à soupe.
Un des "secrets" de réussite d'Elodie c'est de toujours les présenter en part individuelle. Elle commence par une cuillère à soupe de crème, puis elle ajoute une couche de biscuits trempés en entier dans le café, elle saupoudre de cacao à l'aide d'une passoire à thé. Enfin, une couche de crème et au moment de servir elle couvre de cacao (3h minimum au frigo).

I am not very prolific this moment because I am on holiday ! , but I wanted to catch me up by requesting from my hosts to concocter for me their specialities culinary. To begin this "Summer 2006 tour" the top tiramisu !!!

My friend Elodie is the queen of the tiramisu, her version is delicious and puts everyone of agreement. I benefitted from my Parisian weekend of fiesta continues (8h sleep in 2 days) to ask her to make her little marvels under my eyes in order this Italian speciality does not resist to me any more!!!
Well, under my eyes, it's maybe too much (after a 2h nights, and a certain quantity of alcohol in blood), the cooker also did not have really "the eyes in the holes", but......... it worked ! This recipe is thus the RECIPE "ANY GROUND" OF the TIRAMISU !

Tiramisu of the extreme _ for 4 persons

A small boat of mascarpone (250g)
5 biscuits "à la cuillère"
3 egg yolks
4 tbs of suggar
200 cl of "fleurette" cream
cocoa powder
coffee

Beat the cream fleurette in chantilly, put the mascarpone in a bowl and add the yolks one by one, mix with "a spoon in wood". Introduce delicately the cream fleurette with the mascarpone/yolks mixture. Sweeten according to the tastes, approximately 4 tbsp.
One of the "secret" of Elodie's success is to always present them in individual bowls. She starts with a tsp of cream, then she adds a layer of biscuits soaked in entirety in the coffee, she powders with cocoa using a strainer with tea. Lastly, a layer of cream and at the time to served she covers it of cocoa (3h minimum in the fridge).

La confiture aux abricots de Grand-Mère

Dans un monde parfait la perfection serait au 1er essai !

Le nouveau thème de Sugar High Fridays m'a permis de soutirer à ma grand-mère âgée de 91 ans sa recette de la confiture d'abricots. Je n'ai eu que des échecs en confiture et je n'aurais jamais pensé y prendre du plaisir, mais je me suis dit, allez, une dernière tentative. Quelle bonne idée j'ai eu ce jour là, ce fut un triomphe ! .......à un détail près, je n'ai pas enlevé la peau des amandes, elle avait oublié de me le préciser !!!! Nous avons eu quand même un bon moment quand ma mère et ma grand-mère m'ont appris que les amandes provenaient des noyaux .........une poule n'aurait pas eu un regard plus hébété que le mien à ce moment là !!!!!!!!!!

Confiture aux abricots

Environ 1.3 kg d'abricots

600/650 g de sucre

Couper les abricots par la moitié, réserver les noyaux (les casser et garder les amandes), dans une grande marmite laisser toute une nuit les oreillons enrobés de sucre. Le lendemain, cuire 10 à 15 min à feu moyen, sans cesser de tourner. Le lendemain cuire à nouveau 10 à 15 min sans cesser de remuer. Enfin, le troisième jour, ajouter les amandes des noyaux préalablement ébouillantées pour faciliter l'épluchage de leur peau et cuire la confiture jusqu'à ce qu'elle "tombe" bien sur une assiette. Remplir les pots et les retourner jusqu'à ce que la confiture refroidisse.




Je repense à un message de Béa, être paresseuse fait vraiment des miracles ! Tu m'avais dit "chiche", j'ai suivi !!!!!!!!!!!

The new topic of Sugar High Fridays allowed me to tap to my 91 years old grandmother her apricot jam recipe. I had only failures with jam and I could never think to take pleasure with it, but I said to myself, go, a last try. What a good idea I had this day, it was a triumph! ...... to a detail near, I did not remove the skin of almonds, she had forgotten to specify it to me !!!!
Nevertheless we had a good moment when my mother and my grandmother taught me that the almonds came from the cores......... a hen would not have had a glance more stupefied than mine at this time !!!!!!!!!!

Apricot jam

Approximately 1.3 kg of apricots

600/650 G of sugar

Cut apricots by half, reserve the cores (break them and keep almonds), in a large pot, leave a night apricots coated with sugar. The following day, cook 10 to 15 min with medium fire, without ceasing turning. The following day cook again 10 to 15 min without ceasing stirring up. Lastly, the third day, add almonds of the cores scalded beforehand to facilitate the weeding of their skin and cook jam until it "falls" well on a plate. Fill the pots and turn over them until jam cools.

I reconsider a Béa's message, being lazy makes real miracles ! You said to me "chiche", I followed !!!!!!!!!!!

Une journée pour les crevettes

(A day for prawns )

Je voulais partager avec vous ma 1ère pêche !!! Oui oui, je suis une bretonne mais comme toute vraie bretonne j'ai vu du pays moi Madame ! Voici donc ma "récolte", je me sens comme l'homme de cro-magnon après sa découverte de "la Chasse" !!!!!!!!!
Pour la petit histoire j'ai appris pendant cette pêche la naissance de mon petit cousin : "Audren" (une autre sorte de crevette !), les autres pêcheurs m'ont regardés telle une parisienne en short qui apporte son portable MEME aux grandes marrées !!!!!!

I wanted to share with you my 1st fishing !!! Yes yes, I am Breton but as a real Breton I travelled me Madam ! Here thus my "harvest", I feel as the man of cro-magnon after his discovery of "Hunting" !!!!!!!!!!!!

For the little story I learned during this fishing my little cousin's birth : "Audren" (another kind of prawn !), the other fishermen looked at me as a Parisian in shorts who bring her mobile phone EVEN to the fishing time !!!!!!

Cake pour un "Thursday tea afternoon"


(A cake for a "thursday tea afternoon")

Dans un monde parfait ce serait "coffee morning" tous les morning !!!

De mes séjours passés en Angleterre j’ai gardé un souvenir tendre des « Friday coffee morning ». Des femmes « au foyer » pour la plupart qui se croisent toute la semaine à l’école et qui habitent bien souvent dans le même quartier se réunissent chez l’une d’entre elles et racontent leurs soucis, leurs projets, leurs rêves, leurs fantasmes ( elles ne sont pas toutes « desperate » !)…….autour d’une tasse de ….thé, forcément, pour un « coffee morning », avec des digestive chocolate biscuits.

En France on commence tout juste à s’y mettre, mais « l’humeur » est plus à 16h !!! Je vous livre la recette du « cake exotique » que j’ai fait pour l’occasion, en France, les digestive biscuit on ne connaît pas !

La prochaine fois je vous parlerai des « girls night » et je terminerai ma trilogie avec les « pamper night », Dieu que j’ai aimé l’Angleterre !

Cake exotique

100g de noix de coco en poudre
200ml de lait de coco
100g de farine
100g de beurre
80g de sucre
4 oeufs
1 bâton de vanille
1 sachet de levure chimique
2 sachets de sucre vanillé
3 tranches de mangue (Picard)
rhum

Mélanger la moitié du beurre, les jaunes d'oeuf, les sucres, les grains de vanille. Rajouter en filet le lait de coco puis la farine, terminer par une cuillère à soupe de rhum. Rajouter la deuxième moitié de beurre (elle s'incorporera moins uniformément et permettra d'obtenir un cake fondant). Battre les blancs en neige, et les incorporer délicatement. Rajouter la mangue découpée en petits morceaux. Déposer dans un moule beurré et fariné, thermostat 6, entre 30 et 40 min.

Of my stays passed in England I had a tender memory of the "Friday coffee morning". Few housewives for the majority who cross all the week at the school and who live very often in the same district meet each other and talk about their concern, their projects, their dreams, their phantasms (they are not all "desperate"!)......with a cup of... tea, inevitably, for a "coffee morning", with digestive chocolate biscuits.

In France we just begin to do it, but "mood" is more at 16 o'clock !!! I deliver the recipe of the "exotic cake to you" which I made for the occasion, in France, digestive the biscuit we doesn't know!

The next time I'll speak to you about the "girls night" and I will finish my trilogy with the "pamper night", God whom I loved England!


Exotic cake

100g of coconut powder
200ml of coconut milk
100g of flour
100g of butter
80g of sugar
4 eggs
1 stick vanilla
1 yeast sachet
2 vanilla sugar sachets
3 mango sections
rum

Mix half of butter, eggs yolks, sugars, grains of vanilla. Add in net the coconut milk then flour, to finish : a spoon with rum tsp. Add second half of butter (it will less uniformly be incorporated and will make a melting cake). Beat the white in snow, and incorporate them delicately. Add mango cut out in small pieces. Deposit in a buttered and floured mould, thermostat 6, between 30 and 40 min.

Une tarte aux abricots, belle ET délicieuse


(An apricot pie, lovely AND delicious)

Dans un monde parfait j'aurais toujours "le beurre et l'argent du beurre", en "faisant d'une pierre deux coups" !!!

Les choix uniques je les ai en horreur, petite ça m’énervait toujours quand on me disait « tu ne peux pas faire deux choses en même temps ». C’est quoi cette blague ? Je sais broder tout en participant aux très très longs apéritifs-refaire-le-monde-familiaux, je sais tondre la pelouse tout en bronzant, je sais conduire tout en chantant (beuglant ?!), je sais faire ma manucure + pédicure tout en regardant un match de foot à la tv, je sais suivre un cours de droit de la fonction publique tout en faisant ma sieste (mise en pratique immédiate de la théorie, parfait !).
C’est pourquoi je veux un blog qui parle de cuisine ET de photographie, je veux un blog qui soit chic ET drôle, tout à mon image !!!!!!!!
Je vous ai déjà parlé des blogs culinaires les plus beaux, voici les plus drôles, ils ont un rapport plus ou moins proche avec la "food culture". Ils sont tous en français, forcément, car j’ai beau ADORER ce peuple étrange que sont les anglais et chercher à faire les beaux yeux aux américains, tant que je ne serais pas bilingue (ce qui est une question de mois au rythme d’un post « bi-goût » tous les deux jours), je ne pourrais pas prendre autant de plaisir à lire les subtilités d’une autre langue que le français.

Mon top :

1_ Anaïk, cette fille a une plume irrésistible, on est addict dès le 1er post lu, c’est fatal, c’est comme le Nutella ... , c'est son "mojito" qui me laisse le plus baba … !
2_ Framboise, elle est extra, c’est bien vu, incisif et subtil, je ne me remets pas de la visite de Jessica.
3_ Hélène, c’est "bloody funny", mais y a pas de recettes ! Hey, peut pas tout avoir, un billet hilarant par jour qui nous fait nous sentir moins seule, c'est déjà beau n'est-ce pas ?!

Il est toujours intéressant de se pencher sur les recettes dont les bloggeurs se réclament être des spécialistes. En lisant le blog de Pascale j'ai vite compris que la tarte aux abricots était un de ses grands succès, je l'ai suivie à la lettre, et bien entendu, je n'ai pas été déçue. La recette est ici.

The one and only choices, I loathe them, when I was a child it would always annoy me when people said "you cannot do two things at the same time". Are you kidding me ? I can very much so embroider while taking part in very long aperitif-remake-the-world-family-talk, I can mow the lawn while I'm suntanning, I can sing while driving (barking ?!), I can make my manicure + pedicure while watching a football match on the TV, I can attend an administration law lecture while napping (immediate practical application of the theory, perfect! ). This is why I want a blog which speaks about food AND photography, I want a blog which is smart AND funny, all at my image !!!!!!!! I already shared my favourite most beautiful culinary blogs with you, now the funniest, they more or less relate to "food culture"! Inevitably all written in French, because even if I ADORE these strange people that British are and always try to flirt with the Americans, as long as I’m not bilingual (which is a matter of time--one month or two at the rate of a post "bi-taste" every two days), I could not take as much pleasure in reading the subtleties of another language than French.

My "top":

1 _ Anaïk, this girl has an an incredibly amazing writing style,that hook you up at the very 1st post, it's deadly, totally wicked, like Nutella...,her "mojito"drives me totally crazy ... !
2 _ Framboise (Raspberry), it's extra, it's "well seen", biting and subtle, I just can’t stop cracking up with Jessica's visit.
3 _ Helene, it's "bloody funny", but doesn't have recipes ! Hey, can't have everything, a laughable post each day makes us feel less lonely, it's already a good thing isn't it ?!

It's always interesting to consider the recipes whose bloggeurs claim being specialists. Reading Pascale's blog I quickly understood that the apricots tart was one of her great achievements, I used the recipe and followed every instruction accordingly, and of course, I wasn't disappointed. The recipe in French is here.

Apricots tart


Pie crust pastry
200 G flour
125 G half butter cold salt
1 egg
Almond cream
90 G of almonds powders
2 eggs slightly beaten
100 G caster sugar
90 G soft butter
1kg apricots

Mix the almond powder, butter and sugar until a homogeneous consistency. Add the eggs then mix well. Preheat your oven on 175°C. Spread out the almond cream on crust pastry cooked "at white" (?) and cooled. Lay out the half apricots over, face convex below. Cook thermostat 175°C during approximately 40 minutes.

Un bread and butter pudding contre un baiser de Keanu Reeves

Dans un monde parfait je me réincarnerais en Sandra Bullock.

Hier soir j'annonçais à Marie-Sophie que j'étais amoureuse ... de Keanu Reeves, elle m'a répondu : "mais tout le monde est amoureux de Keanu", c'est pas faux. Oh, ça ne date pas d'hier, je suis sous son charme depuis Speed, où il y avait déjà Sandra B. d'ailleurs ! Cette fille choisit toujours bien ses films, Keanu deux fois, Harry Connick Jr dans un film que j'adooooore et Hugh Grant, on a vu pires comme partenaires ! Heureusement elle n'est pas dans Sweet November, faut pas pousser quand même !
J'avais préparé un Bread and Butter pudding, c'est vraiment un super plan pour "retour-de-ciné-encore-sous-le-charme-du-héro-du-film", à défaut d'avoir reçu un baiser de Keanu j'ai eu un dessert très réconfortant !

PS : au fait, si quelqu'un vit dans un espace temps aux environs de janvier 1997, j'ai un message pour lui !

Bread and Butter Pudding

J'ai suivi la recette de Pascale, son livre étant LA référence de toutes les petites merveilles anglo-saxone. Réchauffé c'est délicieux, mais la prochaine fois je le préparerai à l'avance et je ne le passerai au four qu'au retour du ciné.

Yesterday evening I announced to Marie-Sophie that I was in love... with Keanu Reeves, she answered me : "but everyone is in love with Keanu", that's not false. Oh, that does not go back to yesterday, I'm under his charm since Speed, where there was already Sandra B ! This girl chooses always well her films, Keanu twice, Harry Connick Jr in a film that I adooooore and Hugh Grant, there's worth partners! Fortunately she's not in Sweet November, is not necessary to push nevertheless!

I had prepared Bread and Butter pudding, it's a really one super plan for "return-of-movies-still-under-film-'s-hero-charm", failing to have received a Keanu's kiss I had one very comforting dessert !

PS : If someone lives in a space time around January 1997, I've got a message for him !

I followed the Pascale's recipe, her book being the reference of all the little marvels anglo-saxone. Heated it's delicious, but the next time I will prepare it in advance and I will pass it in the oven only at the return of the cinema.

And the winner is ...


Deux des trois "concours" auxquels j'ai participé sont en ligne.

Pour Sugar High Fridays il faut aller ici, je vous rappelle que ma participation était le trifle mangue-spéculos.
Pour KKVKVK il faut VOTER, alors voici les concurrents, ma participation était l'ile flottante aux deux chocolats. Pour ma part j'ai voté :

Des rondeurs au chocolat

Dans un monde parfait je serais l'heureuse gagnante du KKVKVK, non, ce n'est pas une secte ! C'est "kikiveutkivientkuisiner" ! Ah, vous respirez !

Hier en Bretagne il pleuvait, oh, soyez pas mauvaise langue, ça faisait deux mois et demi qu'on avait pas eu UNE JOURNEE ENTIERE de pluie. Pour ceux qui ne connaitraient pas encore, voici quelques images de MA Bretagne, ici.
Quand il pleut dans mon "pays", on dit qu'il fait un temps à manger du pain et du beurre ! Et quand on a de la chance, on mange des crêpes avec du beurre salé !!! En même temps que j'achetais mes crêpes j'ai pris mon "Elle", qu'elle ne fut pas ma surprise de lire en gros titre : "On s'aime en ronde, être sexy avec ses kilos", si c'est "Elle" qui le dit ... moi j'applique à la lettre ! Et pour être bien sûre que mes rondeurs aient une belle courbure, j'ai réalisé mon idée pour le concours du KKVKVK sur le thème de l'île flottante : une quenelle de mousse au chocolat blanc sur crème anglaise au chocolat noir. Je dois remercier par avance Trish Deseine, qui a publié la "bible du chocolat" et qui m'a inspirée cette recette.

Ile flottante aux deux chocolats

Pour 3 personnes

5 cl de crème fleurette
100 g de chocolat blanc
300 ml de lait
2 jaunes d'oeufs
15 g de sucre
40 g de chocolat noir

Chauffer la crème et verser sur le chocolat blanc, remuer jusqu'à ce que le mélange soit lisse, laisser refroidir au minimum 4h au réfrigérateur. Chauffer le lait sans le laisser bouillir, fouetter les jaunes et le sucre avec un batteur, verser sur le lait, remuer sur feu assez vif en remuant sans cesse, une fois la crème anglaise obtenue, faire fondre le chocolat noir dedans et laisser refroidir complètement avant de mettre au frais. Au moment de servir, sortir le chocolat blanc et le fouetter avec le batteur. J'ai réalisé mes quenelles à l'aide de deux petites cuillères et j'ai décoré avec un caramel dans lequel j'ai mis des amandes concassées.

Vous verrez que la semaine prochaine dans le "Elle" ils diront qu'il faut faire un effort (comme le dit la chanson) pour entamer la rentrée en beauté, mais la beauté c'est se sentir bien dans son corps, et moi, mon corps il est beaucoup plus beau depuis qu'il a goûté à ces petites îles !!!!!!!!!!

Yesterday in French Brittany it rained, oh, don't kidding me, that did two months and half that we hadn't got an ENTIERE DAY of rain. For those who don't know yet, some pictures of MY Brittany, here. When it rain in my "country", we say that it's a time to eat some bread with some butter! And when we are lucky, we eat crêpes with salted butter !!! At the same time as I bought my crêpes I took my "Elle", what a surprise when I read the title : "We like to be round, being sexy with its kilos", if it's "Elle" which says it... me I apply to the letter ! And to be sure that my roundnesses have a beautiful curve, I carried out my idea for the KKVKVK test which topic was "floating island"- îles flottantes : "quenelles" of white chocolate mousse on "English black chocolate cream" - crème anglaise au chocolat noir. I must thank by advance Trish Deseine, who published the "chocolate bible" and who inspired this recipe to me.

Ile Flottante aux deux chocolats (Floating island) _ For 3 personns

5 cl "fleurette" cream
100 g white chocolate
300 ml milk
2 eggs yolks
15 g sugar
40 g black chocolate
Heat the cream and put on white chocolate, stir up until smooth mixture, let cool 4h in the fridge at least. Beat milk without letting it boil, whip yolks and sugar with an "electric beater (?)", put on milk, stir up on rather sharp fire while stirring up unceasingly, once the "crème anglaise" (English cream ?) obtained, dissolve the black chocolate inside and let cool completely before putting in the fridge. Before serving, take the white chocolate and whip it with the "beater". I carried out my "quenelles" using two tea spoon and I decorated with caramel in which one I put crushed almonds.

You will see that the next week in "Elle" they'll say that we should made an effort (like says the song) to start the re-entry in beauty, but the beauty is to fell itself well in its body, and me, my body he is more beautiful since he tasted these small islands!!!!!!!!!!
