Babi Ketjap from Bali

Il y a deux mois j'étais sur un autre continent, totalement dépaysée, les pieds dans l'eau, au soleil ... à Bali !

Bali est une île magique pour tout occidental qui souhaite élargir ses horizons, c'est beau et simple à la fois, il y a la mer, la forêt, la montagne, des éléphants de Sumatra, des singes en liberté dans les parcs, des chauves souris, des poissons exotiques et des coraux absolument magnifiques. Les balinais sont très fervents et d'une grande gentillesse, leur quotidien est rythmé par l'activité des touristes et par les cérémonies aux temples. La plupart ont des vies bien modestes mais vous ne verrez pas de mendiants sur l'île, le tourisme de masse offre mille opportunités de services et l'entre aide est reine, le retour en France a été rude, un blues balinais nous a hantés pendant plusieurs jours !
J'ai d'ailleurs continué à embêter mes amis par téléphone avec ce cri de guerre : "babi ketjap !", oui je suis le genre de fille à répéter à tutête des mots qui l'éclatent et "babi ketjap" qui se prononce "bâbi ketchup" n'y a pas échappé, il s'agit d'une spécialité culinaire locale : le porc au soja.

Je me devais de le préparer dans mon chez moi, mais ce ne sont pas mes complices de voyage qui en ont profité, à eux l'agacement, aux bretons les bons petits plats !

Babi Ketjap - 4 personnes

800g de porc émincé,
2 gros oignons,
2 gousses d'ail,
1 cc gingembre en poudre,
1 cc cumin,
4 cs de sauce soja sucrée,
1 contré de tomates (70g),
1 cs vinaigre balsamique,
4 cs huile d'olive,
1 bouquet de coriandre,
sel et poivre.

Émincer finement les oignons, les faire rissoler dans de l'huile d'olive. Y faire dorer la viande, saler, poivrer puis ajouter l'ail pressé, le gingembre, le cumin, la sauce au soja, le concentré de tomates et le vinaigre balsamique, on couvre le tout d'eau tiède et on laisse mijoter à couvert pendant 3heures à feu très doux en touillant régulièrement
A la sortie on dépose la coriandre finement hachée sur le dessus du plat, aiyé, c'est prêt !

Two months ago I was on another continent, totally in holidays, feet in the water, head on the sun ... in Bali!
Bali is a magic island for each tourist who wish hopen his mind, it's beautiful and simple at the same time, there's the sea, the forest, the mountain,the elephants of Sumatra, some free monkeys in parks, bats, exotic fishes and absolutely magnificent corals.
The Balinese are very fervent and so kind, their daly life is rhythm by the activity of the tourists and the ceremonies in temples. Most have very modest lives but you won"t see beggars on the island, the mass tourism offers one thousand opportunities of services and the help between between each other is way of life, the return in France was rough, a Balinese blues haunted us during several days!

Moreover I continued to annoy my friends by telephone with this war cry: " babi ketjap! ", I'm this kind of girl who repeat the words which she likes again and again," babi ketjap " [bâbi ketchup] didn't escape, it's a local culinary speciality: pork in soya.

I owed prepare it in my home, but it wasn't my travel friends who tasted it, for them the annoying phone call, for the Breton the good meals!


Babi Ketjap - 4 persons

800g of sliced pork,
2 big onions,
2 cloves of garlic,
1 tsp powder ginger,
1 tsp cumin,
4 tsp of soya sweetened sauce,
1 countered of tomatoes (70g of mash),
1 tsp balsamic vinegar,
4 tblsp olive oil,
1 bouquet of coriander,
salt and pepper.

Slice finely the onions, put them in some olive oil. Add the meat, salt, pepper, turn 5min then add the pressing garlic, ginger, cumin, soya sauce, tomato puree and balsamic vinegar, cover it of warm water and let plot, cover, during 3heures on very soft fire, stirring regularly
At the end put the coriander finely chopped on the top of the dish, it's ready!
